GlovesAnalytical tools and testing methods is a program area that supports the development of new technology to detect, characterize, and analyze the properties and microbial quality of dairy-related products and ingredients.

Our researchers are actively developing methods to measure the percent of denatured dairy proteins in solutions and dry ingredients; creating multiplex detection systems that are capable of selecting and simultaneously concentrating Salmonella and Listeria monocytogenes in a food system; and exploring rapid and non-invasive techniques for determining the texture and melting characteristics of process cheese.
